Lean Foxy White Chicken Chili w/ Homemade Baked Doritos


1 (12 oz.) jar salsa verde

3 c. cooked chicken, shredded

2 can cannelloni beans, drained

4 c. chicken stock

1 tsp. ground cumin

Shredded 2 % Mexican blend cheese

cilantro, chopped

Homemade Baked Doritos

Corn tortillas (cut in half)

non-stick spray

taco seasoning

1 tsp kosher salt


Empty the salsa into a large saucepan. Cook 2 minutes over medium high heat; then add the chicken, beans, broth, and cumin. Bring to a boil, lower heat to a simmer, and cook for 10 minutes; stir occasionally. Top each bowl with a handful of baked chips, a dollop of lite sour cream, cilantro and cheese.
