Dinner Omelet


1 whole egg

2 egg whites

1/4 cup feta cheese, crumbled

1/4 cup chopped tomato

1 cup baby spinach leaves

1 slice whole wheat bread or 1 whole-grain English muffin

1 tsp olive oil


In non stick skillet, sauté spinach and tomato with olive oil for 1-min. Add egg mixture and cheese to make omelet. Serve with 1 slice of whole wheat toast or 1 whole grain English muffin.
