INGREDIENTS:
3 eggs
1 cup of Sugar
1 teaspoon vanilla
3 cups shredded coconut
DIRECTIONS:
1. Pre-heat oven to 325 degrees
2. Crack each egg and place the whites into the bowl of an electric stand mixer. If you don't have a stand mixer, you can use a hand blender instead. Put on the whisk attachment and beat the egg whites until they are fluffy with bubbles and foam.
3. Pour in the vanilla and gradually beat in the sugar a tablespoon at a time.
4. Beat the mixture at a high speed until you get very stiff peaks when you lift up the whisk.
5. Remove the bowl from the stand mixer and pour in the coconut.
6. With a spoon, mix it all together.
7. Line cookie sheets with wax paper.
8. With rounded teaspoonfuls, drop the mixture onto the baking sheets.
9. Place baking sheets in oven and bake for 10-15 minutes.
