Mediterranean Stuffed Bell Peppers

This stuffed Bell Peppers recipe is a classic Mediterranean dish with a twist.

INGREDIENTS:
1lb Beef inside round (finely chopped)
1 medium yellow onion, diced
1 cup uncooked white rice
1 cup split peas
6 large green bell peppers
2 cups tomato sauce
2 cups water
Pinch of saffron
Salt and pepper to taste

SauteIONS:
1) Sautee the onion and the beef until the moisture is gone.
2) Add rice, split peas, 1 cup tomato sauce, 1 cup water, saffron, salt and pepper. Cook all the mixture on a very low heat for about one hour until the meat is cooked thoroughly.
3) Wash the bell peppers and carefully cut out the stems and take out the seeds. Save the stems to seal the peppers later.
4) In a baking dish, pour the remaining 1 cup tomato sauce and 1 cup water.
5) Fill bell peppers with cooked mixture.
6) Place prepared bell peppers in the dish. Cover with foil and bake at 350 degrees for about 45 minutes. Serve with other side dishes of your choice.
