Heirloom Tomato Lasagna

Raw food has become a craze but you can really spice things up without heating them up. This raw lasgana combines lots of flavor with healthy vegetable choices.

INGREDIENTS:

Pistachio Pesto
4 C Basil
4 C Pistachio
1 Clove Garlic
Zest of 1 lemon
Pinch Sea Salt
Pinch Black Pepper
1 C Olive Oil

Marinara
1 C Sundried Tomatoes
1 C Tomato
2 T Onion, minced
1 T Lemon Juice
2 T Olive Oil
1 T Agave
Basil
Thyme
Oregano
Pinch chili flakes
Sea Salt, Cracked Black Pepper

Macadamia Cheese
2 C Soaked Macadamia
1 T Nutritional Yeast
1 C Water

Garnish
Zucchini, season and brush with oil
Basil oil
Micro Basil

DIRECTIONS:

Pistachio Pesto
1. Combine all ingredients in blender, pouring in Olive Oil at end.

Marinara
1. Combine all ingredients in a mixer, puree until smooth

Macadamia Cheese
1. Combine all ingredients in mixer, puree until smooth.

Assembly
1. Build up two layers of zucchini, pesto, marinara and cheese. Garnish with micro basil and herb oil.
