Description

We are excited to welcome Casey Finau from Panera back to the Cooking Corner. This time, she will show us how to make Broccoli Cheddar Quinoa Bites.


Ingredients

  • 16 oz. Panera® Broccoli Cheddar Soup
  • 3 cups pre-cooked quinoa
  • 1 egg
  • 1/2 cup shredded Cheddar cheese
  • 1/4 cup breadcrumbs
  • salt and black pepper

Instructions

  1. Step 1: Preheat oven to 400°F. Spray muin tins with non-stick cooking spray. Set aside.
  2. Step 2: In a large bowl, combine soup, cooked quinoa, egg, cheese, and breadcrumbs. Mix well. Season with salt and pepper.
  3. Step 3: Place 1/4 cup of mixture into prepared muin cups. Bake for 18-20 minutes or until edges turn golden brown. Allow to cool for 5 minutes before removing from pan.
