Raspberry & Cream Overnight Oats


Ingredients

  • 1/2 cup fresh raspberries
  • 1/3 cup rolled old-fashioned oats
  • 2 tsp chia seeds
  • Pinch of salt
  • 2 tsp pure maple syrup
  • 1/2–3/4 cup milk or coconut milk
  • 1/2 teaspoon vanilla extract
  • Fresh raspberries, sliced almonds, and mini chocolate chips for topping

Instructions

  1. Prep: In a small bowl or jar, gently mash the fresh raspberries with a fork.
  2. Prep: Spoon the mashed raspberries into the jar or bowl.
  3. Prep: In the same container, add the rolled oats, chia seeds, salt, maple syrup, 1/2 cup of milk, and vanilla extract.
  4. Prep: Stir the ingredients together until well combined. Taste and adjust sweetness or consistency by adding more maple syrup, vanilla extract, or milk if needed.
  5. Prep: Allow the mixture to sit for about 5 minutes to thicken as the oats and chia seeds absorb the liquid.
  6. Prep: Once thickened, spoon the oats mixture over the mashed raspberries in the jar.
