INGREDIENTS:
• 1/2 cup Parmesan cheese, grated
• 1/2 cup Iltalian season bread crumbs
• 2 tablespoons fresh garlic, chopped
• 1 teaspoons fresh mint, chopped
• 2 tablespoons fresh Italian flat leaf parsley, chopped
• 1 link Italian sausage, cooked and chopped
• 1/8 teaspoon salt
• 1/8 teaspoon pepper
• 3 tablespoons olive oil
• 30 whole mushrooms, cleaned with stems removed
DIRECTIONS:
1. Preheat oven to 400 degrees.
2. Mix Parmesan cheese, garlic, parsley, mint, sausage, salt, pepper and 1 1/2 tablespoons olive oil in a bowl.
3. Take each mushroom and twist out stem and scrape gently the inside of the mushroom cap with the end of a small spoon to allow room to stuff the mix.
4. Add about 1 teaspoon of mix to each mushroom cap and place on baking sheet with stuffing side up.
5. When all mushrooms are stuffed, lightly drizzle the remaining 1 1/2 tablespoon olive oil over the stuffed mushrooms.
6. Bake for 25 minutes.
