Pumpkin Crème Brulee

With the fall season bringing pumpkin cappuccino, ice cream, muffins and pie it is the time of year for all great things pumpkin. Chef Mee offers up a pumpkin crème brulee recipe.

Ingredients:

3 and a ¼ pints heavy cream

20 egg yolks

¾ cup sugar

Small amount of Kaluha

20 ounces canned pumpkin

1 teaspoon pumpkin pie spice

Cooking instructions:

Scald Cream-set aside

Whisk yolks, then add sugar and Kaluha, whisk gently until mixed but not frothy

Add some of the cream into the yolk mixture

Pour this into all the cream

Add pumpkin

Bake in water bath @ 350 degrees for 30 minutes

Chill

Top with brown sugar and white sugar and caramelize
