Salmon with Lime Crema Sauce

Salmon with Lime Crema Sauce

Sauce
1 cup sour cream                               1/4 teaspoon salt & dash pepper
1 small can diced green chiles         1/2 teaspoon ground cumin
1/2 cup diced fresh tomatoes           1/2 teaspoon dried oregano
2 tablespoons red wine vinegar        juice of 1/2 fresh lime

1 1/2 lbs. fresh salmon
2 cups fresh green beans, washed and snapped
1 cup grape tomatoes

  1. To prepare sauce, put sour cream in a bowl, add rest of sauce ingredients mixing well. Set aside.
  2. Add a small amount of olive oil to a hot skillet and saute salmon pieces, turning once.  Test salmon for doneness by making a small cut into the thickest part of the salmon--the meat should flake easily and have an even color.
  3. Remove salmon and set aside.  To the same pan, add a little olive oil and saute' green beans for about 3 minutes.  Add the tomatoes and saute' another minute.
  4. To serve, arrange some of the green beans and tomatoes on the plates.  Place the salmon on top of the vegetables and spoon 2 tablespoons of the Lime Crema Sauce on top.
