Honey Ginger Shrimp

INGREDIENTS:

  • 1 tablespoon olive oil
  • 1 tablespoon red pepper flakes
  • 1 teaspoon chopped garlic
  • 1/4 yellow onion, chopped
  • 1 teaspoon fresh ginger
  • 1 teaspoon honey
  • 1 pound medium shrimp - peeled and deveined
  • ¼ cup of fresh cilantro
  • salt and pepper to taste

DIRECTIONS:

  1. Heat the olive oil and red pepper flakes in a large skillet over medium heat. Add the onions, garlic, ginger and honey; cook and stir until fragrant. Add the shrimp, and cook for 5 minutes, stirring as needed, until shrimp are pink and opaque, ad chopped cilantro before serving. Optional brown rice, or whole wheat pasta.

One serving (1/4th of recipe) provides 165 calories, 23 grams protein, 5 grams fat, .8 grams saturated fat, 7 grams carbohydrate, <1 gram fiber, 172 mg cholesterol and 170 mg sodium.  (without adding salt)
