Halloween Pudding Cookies
- 1 stick (1/2 cup) unsalted butter, room temperature
- ¾ cup brown sugar
- 1 teaspoon vanilla
- 1 egg
- 1 ¼ cup all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 small package vanilla instant pudding
- 1 cup Halloween M&M’s
- In a large mixing bowl using a stand or hand mixer, beat together the brown sugar and butter until creamy.
- Continue mixing while you add an egg and the vanilla.
- Place all the dry ingredients in a bowl and fluff together using a fork and then slowly add the dry ingredients into the butter mixture.
- Once the dough is formed stir in the sprinkles and 1/2 cup of the M&M candies.
- Cover with plastic wrap and chill for 30 minutes.
- Preheat oven to 350° and line a baking sheet with parchment paper.
- Use a cookie scoop to dip out the cookies and gently press down with your hand so they are about 1 inch thick.
- Bake for 10 minutes or until golden brown on the edges.
- Remove from oven and place additional M&Ms on top and any other candy decorations.
- Allow the cookies to cool and store an airtight container until you’re ready to serve.
