Stuffed Zucchini Boats

  1. 1/2 onion, sliced thin
  2. 1/2 red pepper, sliced thin
  3. 1/2 green pepper, sliced thin
  4. Olive oil
  5. Salt and pepper
  6. 2 large zucchini, cut in half
  7. 1/4 cup leftover cooked rice or rice pilaf**

  1. Sauté the onion and peppers in olive oil till tender.
  2. Remove the seeds from the zucchini and set onto a parchment lined baking sheet.
  3. Preheat oven to 350 degrees.
  4. Add the rice to the sautéed veggies to warm.
  5. Spoon into the “boats” and sprinkle with parmesan cheese.
  6. Cook in the oven for 20-30 minutes or until golden brown.

**1/4 cup per 1/2 of zucchini
