Fall Rice Pilaf

  1. 2 tablespoon butter
  2. 1/2 cup long grain white rice 
  3. 1/2 cup orzo pasta
  4. 1/2 onion, diced
  5. 2 cloves garlic
  6. Fresh thyme
  7. 2 cups chicken broth or stock
  8. Dried raisins or currents
  9. 1/4 cup hot tap water
  10. Pumpkin seeds


  1. Sauté the onion, garlic and orzo in a sauce pan with 1-2 teaspoons olive oil until pasta is golden brown over medium high heat.
  2. Stir in rice, broth or stock and cook until water is completely absorbed.
  3. Remove from the heat and fluff with a fork.
  4. Garnish with pumpkin seeds and fresh parsley.
