Lemon Tomato Basil Pasta

  1. 1 pound cavatappi pasta, cooked al dente
  2. 2-3 tablespoons olive oil (I use Colavita)
  3. 2 cloves garlic, minced
  4. Zest & juice 1 lemon
  5. 2-3 cups cherry tomatoes
  6. 1/2 cup diced tomatoes
  7. Large bunch fresh basil, chopped
  8. drizzle Colavita Lemon Extra Virgin Olive Oil 
  9. 1/4 cup Parmesan cheese


  1. In a large skillet over medium high heat, saute the garlic and lemon zest in the oil for 1 minute.
  2. Add in the whole cherry tomatoes and the diced tomatoes to the oil and stir.
  3. Add the cooked pasta and continue to cook till the tomatoes begin to burst.
  4. Stir in the parmesan cheese and fresh basil.
  5. Remove the pasta from the pan just as the cheese begins to melt into the pasta.
  6. Serve with a drizzle of lemon olive oil and more basil.
  7. Enjoy!
