Traditional Greek Souvlaki

(aka Grilled Meat on Skewers)

Chicken:

  1. 1 pound of boneless skinless chicken breast
  2. 1 pound boneless skinless chicken thighs

Pork:

  1. 1 pound pork tenderloin or pork shoulder

Marinade:

  1. ½ white onion, minced
  2. 4 cloves garlic, minced
  3. 1 tablespoon dried oregano
  4. 1 ½ teaspoon sea salt
  5. 1 teaspoon fresh cracked pepper
  6. 2 lemons, juiced
  7. 1 lemon, zest
  8. ¼ cup olive oil

Grilling Sauce:

  1. ¼ cup olive oil
  2. Pinch of salt
  3. 2 lemons, juiced
  4. ½ teaspoon dried oregano

Other supplies needed:

  1. Wooden or metal skewers
  2. Squeeze bottle
  3. Lettuce
  4. Sliced Tomatoes
  5. Tzatziki sauce
  6. feta cheese


  1. Cut the meat into 1½-2 inch cubes and place in a Ziploc bag.
  2. Mix together the marinade in a bowl and pour over the meat.
  3. Seal and set in the refrigerator for a minimum of 8 hours.
  4. Periodically flip over the bag to evenly marinate.

To Prepare & Cook:

  1. Soak wooden skewers in a clean sink for 20 minutes.
  2. Remove the meat from the refrigerator and allow it to sit on counter while skewers soak.
  3. Prepare the grilling sauce by adding olive oil, salt, lemon juice and oregano to the squeeze bottle.
  4. Screw on the top and shake to mix well and set next to the grill.
  5. Add 6 pieces of meat to the soaked skewers and set on a platter.
  6. Preheat a grill or grill pan on high heat.
  7. Brush with vegetable oil.
  8. Brush pita bread with olive oil on both sides and set on grill to warm.
  9. Once you see grill marks flip.
  10. Set on a platter and cover with a clean dish cloth.
  11. Set skewers onto grill and cook for 3 minutes per side.
  12. Flip over until all sides have grill marks.
  13. On the last “flip" squeeze grilling sauce over the chicken.
  14. Serve as a sandwich with pita topped with Tzatziki, sliced tomatoes, sliced red onion and crumbled feta cheese or just serve with green salad and grilled pita.
  15. Enjoy!

***Store grilling sauce in refrigerator for up to 2 weeks! Perfect on all meats or veggies!***
