Traditional Greek Souvlaki

Traditional Greek Souvlaki
(aka Grilled Meat on Skewers)
Chicken:
- 1 pound of boneless skinless chicken breast
- 1 pound boneless skinless chicken thighs
Pork:
- 1 pound pork tenderloin or pork shoulder
Marinade:
- ½ white onion, minced
- 4 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 ½ teaspoon sea salt
- 1 teaspoon fresh cracked pepper
- 2 lemons, juiced
- 1 lemon, zest
- ¼ cup olive oil
Grilling Sauce:
- ¼ cup olive oil
- Pinch of salt
- 2 lemons, juiced
- ½ teaspoon dried oregano
Other supplies needed:
- Wooden or metal skewers
- Squeeze bottle
- Lettuce
- Sliced Tomatoes
- Tzatziki sauce
- feta cheese
- Cut the meat into 1½-2 inch cubes and place in a Ziploc bag.
- Mix together the marinade in a bowl and pour over the meat.
- Seal and set in the refrigerator for a minimum of 8 hours.
- Periodically flip over the bag to evenly marinate.
To Prepare & Cook:
- Soak wooden skewers in a clean sink for 20 minutes.
- Remove the meat from the refrigerator and allow it to sit on counter while skewers soak.
- Prepare the grilling sauce by adding olive oil, salt, lemon juice and oregano to the squeeze bottle.
- Screw on the top and shake to mix well and set next to the grill.
- Add 6 pieces of meat to the soaked skewers and set on a platter.
- Preheat a grill or grill pan on high heat.
- Brush with vegetable oil.
- Brush pita bread with olive oil on both sides and set on grill to warm.
- Once you see grill marks flip.
- Set on a platter and cover with a clean dish cloth.
- Set skewers onto grill and cook for 3 minutes per side.
- Flip over until all sides have grill marks.
- On the last “flip" squeeze grilling sauce over the chicken.
- Serve as a sandwich with pita topped with Tzatziki, sliced tomatoes, sliced red onion and crumbled feta cheese or just serve with green salad and grilled pita.

***Store grilling sauce in refrigerator for up to 2 weeks! Perfect on all meats or veggies!***
