Country Style Corned Beef Hash

  1. 2 cups chopped corned beef
  2. 2 russet potatoes, peeled and cubed
  3. 1 tablespoon Irish butter
  4. 2 tablespoon vegetable oil
  5. ½ red and yellow pepper, diced
  6. ½ onion, diced
  7. 1 cup mushrooms, diced
  8. Freshly grated pepper
  9. Fried eggs (optional)


  1. Boil diced potatoes in a large pot of salted water for 5 minutes.
  2. Drain and pat dry with a clean dish cloth.
  3. In a large frying pan, saute the onion, peppers and mushrooms till tender in 1 tablespoon oil.
  4. Add additional oil and Irish butter to the saute pan.
  5. Stir in the potatoes and corned beef over medium high heat.
  6. Continue cooking until the potatoes are browned.
  7. Serve with fried eggs and toast!
