Chewy Molasses Spice Cookies

  1. One and a half sticks unsalted butter, room temperature
  2. 1 1/2 cup granulated sugar, divided
  3. 1/4 cup molasses
  4. 1 egg
  5. 1 tablespoon pumpkin pie spice
  6. 1 1/2 teaspoon baking soda
  7. 1/4 teaspoon allspice
  8. 1/2 teaspoon salt
  9. 2 cups all purpose flour


  1. Preheat oven to 350 degrees.
  2. Line 2 baking sheets with parchment paper.
  3. Use a medium sized bowl and beat together the butter and one cup of granulated sugar for two minutes or until fluffy using an electric mixer.
  4. Beat in the egg and vanilla until incorporated. In another bowl, mix together the flour, spices and baking soda.
  5. Slowly add the dry ingredients to the butter mixture until it is all mixed together.
  6. Use a cookie scoop to portion out the cookies and drop into the leftover 1/2 cup sugar.
  7. Roll the dough in the sugar and set on baking sheet.
  8. Allow at least 3 inches between cookie balls.
  9. Cook for 10-13 minutes or until lightly toasted.
  10. Remove from the oven and set cookies on a cooling rack.
  11. Enjoy with a cold glass of milk!!
