2 heaping cups old fashioned oats (certified gluten free if necessary)
1 cup blueberries or 1 banana
1 egg
1 cup almond milk
1 tbsp honey or maple syrup
1 tsp vanilla
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
Use a high power blender to blend oats till they turn to flour.
Add in the banana, egg, almond milk, maple syrup, vanilla, baking powder, baking soda, salt and cinnamon and blend till a batter consistency is reached.
Heat a nonstick skillet over medium high heat.
Brush the inside of the pan with melted butter and pour 1/2 cup of batter into skillet.
Cook for 2-3 minutes or until bubbles form and then flip over.
