Curried Shrimp Rice Salad

  1. 4 cups cooked brown rice
  2. 10-12 cooked large shrimp, cut in half
  3. 1 cup cucumber, chopped
  4. 2 green onions, chopped
  5. 1/2 cup mayonnaise
  6. 1 tablespoon curry powder
  7. 1 tablespoon cilantro, chopped
  8. 1/4 cup cashews, chopped


  1. In a large bowl, add the rice, shrimp, cucumber, green onions, cashews and cilantro.
  2. In a small bowl, whisk together the mayonnaise and curry powder.
  3. Stir in the mayonnaise into the salad until everything is coated.
  4. Chill for at least 4-6 hours before serving.
