Mile High Muffins

Mile High Muffins

  1. 3 C. flour
  2. 1 1/2 C. white sugar
  3. 1 tsp. vanilla
  4. 1 tsp. salt
  5. 4 tsp. baking powder
  6. 2/3 cup vegetable oil
  7. 2 eggs
  8. 1 ¼ c. buttermilk
  9. 2 cups fresh blueberries
  10. Additional berries for decorating
  11. Pop Rocks
  12. Sparklers


  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Grease muffin cups or line with muffin liners.
  3. Combine flour, sugar, salt and baking powder.
  4. Mix in oil, eggs, and buttermilk. (TIP: if you don’t have buttermilk on hand, add about 1 T. lemon juice to a cup of milk and let sit for about 5 minutes).
  5. Fold in blueberries.
  6. Fill muffin cups 2/3 full.
  7. Bake for 18 minutes.
  8. Frost with cream cheese icing. 
  9. Makes 24 muffins.
