Breakfast Burritos

  1. 4 burrito sized tortillas
  2. 4 sausage patties, crumbled
  3. 2 cups frozen O’brien potatoes
  4. 1/4 cup chopped onion
  5. 1/2 green pepper, chopped
  6. 6 eggs, scrambled
  7. 1 cup shredded cheese
  8. 1 cup black beans 
  9. Sour cream
  10. Salsa


  1. Warm tortillas in a warm skillet.
  2. Flipping to warm both sides.
  3. Place on a plate lined with a tea bowl.
  4. Wrap the tortillas to keep warm. 
  5. Drizzle skillet with olive oil and cook the sausage, 2 cups potatoes, onion, peppers and black beans till potatoes are browned.
  6. Cook the eggs in the skillet and then assemble the burritos.
  7. Place a large spoonful of the potato mixture in the center of the tortilla.
  8. Add a spoonful of eggs and sprinkle with cheese.
  9. Fold in the sides and roll.
  10. Serve with salsa and sour cream.
