Fresh Rolls
12 rice papers
2 cups hot water
1 Cup shredded carrots
1 cucumber, julienned
1 red pepper, julienned
1 package Rice noodles, precooked
12 Bibb lettuce leaves
Peanut sauce
Place the hot water in a pie pan and set one sheet of the rice paper into the water and let it sit for 40 seconds.
To assemble the fresh rolls: Remove the rice paper from the water. Shake off excess water. Set it on a cutting board, and place the veggies in the center facing the same direction. Leave 1 inch around all edges clear. Bring the rice paper over the top on the “side of the veggies” Roll up and Bring in the corners on both ends and continue rolling until it is completely enclosed. Set the fresh roll on a plate, and serve with peanut sauce. Feel free to add sliced chicken grilled pork or shrimp to your fresh rolls. Make extras and store in a Ziploc bag for up to four days in the refrigerator.
