Lemon Cream Cupcakes

  • 1 white cake mix
  • 3 eggs
  • 1/4 cup sour cream
  • 1/3 cup vegetable oil or unsalted butter (melted)
  • 1 1/4 cup water
  • 1 teaspoon lemon zest
  • 1 cup lemon curd
  • Cream cheese or vanilla frosting
  1. Preheat oven to 350 degrees.
  2. Line cupcake baking sheet with cupcake liners.
  3. In a medium sized bowl, mix together the cake mix with eggs, sour cream, vegetable oil, lemon zest and water with an electric mixer till smooth.
  4. Pour the cupcake mix into the cups till 2/3 full.
  5. Bake for 20-25 minutes or until golden brown.
  6. Allow the cupcakes to cool completely.
  7. Cut a hole in the center of each cupcake and remove the cake.
  8. Fill with lemon curd using a piping bag.
  9. Frost with your favorite frosting.
  10. Sprinkle with more fresh lemon zest.
