Pesto Caprese Chicken

  • 4 boneless skinless chicken breasts
  • 1/2 cup prepared pesto sauce
  • 1 tomato, sliced into 4 slices
  • 1 cup shredded Mozzarella cheese or Italian cheese blend
  • Fresh basil
  1. Preheat oven to 350 degrees.
  2. Spray a casserole dish with nonstick cooking spray.
  3. Place the 4 chicken breasts in the dish and sprinkle with salt and pepper.
  4. Add 1-1/2 tablespoons pesto to the top of the chicken breast and spread to cover completely.
  5. Repeat on the remaining 3 pieces of chicken.
  6. Sprinkle 1/4 cup of shredded cheese on top of each chicken breast.
  7. Add a slice of tomato on top of each one and then bake for 30 minutes or until bubbly and chicken is cooked through.
  8. The last 5 minutes of baking turn the broiler on and cook so cheese gets nice and toasty.
  9. Serve hot and with your favorite green salad.
