Christmas Morning Frittata 

Ingredients:

  • 2 cups shredded hash browns (refrigerator section)
  • 8 eggs
  • 1/4 cup milk
  • salt and pepper
  • 1 cup crumbled bacon, sausage, cubed ham or smoked sausage
  • 4 green onions, chopped
  • 1/2 cup chopped peppers
  • Or veggies of your choice
  • 1 cup shredded sharp cheese
  • 4 individual mini pie tins or 9-inch pie pan

Directions:

  1. Preheat oven to 375 degrees.
  2. Spray pie tin with nonstick cooking spray.
  3. Press the shredded potatoes into the bottom of the pie tins.
  4. Sprinkle with protein of your choice and veggies.
  5. In a medium sized bowl, whisk together the eggs, milk, salt and pepper.
  6. Pour the custard over the top of the veggies and sprinkle with cheese.
  7. Bake for 30 minutes or until golden brown and there is no jiggle. Serve warm!
