Mama Tricase's Pizzelles

  • 1.5 cups granulated sugar
  • 6 eggs, beaten
  • 1 stick unsalted butter, melted
  • 1 stick margarine, melted
  • 4 teaspoons baking powder
  • 3 1/2 cups all purpose flour
  • 2 drops anise oil (or 1 teaspoon vanilla and 1/2 teaspoon almond extract)
  1. Preheat your pizzelle maker according to manufacturer instructions.
  2. In a medium bowl whisk together the flour and baking powder.
  3. In another medium sized bowl, beat together the sugar, butter and margarine till fluffy.
  4. Mix in the eggs and extracts.
  5. Add the flour slowly while beating into the butter mixture.
  6. Once the flour is incorporated, stop mixing. 

To cook the pizzelles:

  1. Add a teaspoon to a 1/2 tablespoon of the batter to the center of each disk.
  2. Close the pizzelle lid and allow to cook 20-25 seconds.
  3. Raise and check that the cookies are golden brown.
  4. Carefully remove from the press and allow each cookie to cook on a wire cooling rack.
  5. Dust with powdered sugar or just leave plain.
  6. Store in an airtight container!
