Gigi's Warm Chicken/Turkey Salad

  • 4 Boneless/Skinless chicken breast (boiled and cubed)
  • 1 C. chopped celery
  • 1 onion (chopped fine)
  • 1 C. mayonnaise (do not use that light junk)
  • 1 can cream of chicken soup
  • 1 small jar pimentos (drained)
  • juice of 1 lemon
  • 2 c. cheddar cheese
  • 2 c. crumbled potato chips
  • salt and pepper
  1. Preheat oven to 350 degrees.
  2. Boil the chicken breast.
  3. Remove from water and cool.
  4. Then chop into bite sized pieces.
  5. Place in large bowl and then add all the other ingredients.
  6. Place in sprayed 9 x 13 baking dish.
  7. Top with crumbled Lays potato chips and cheddar cheese.
  8. Cook for 30 minutes till warm and bubbly.
