Oven Roasted Sweet Squash

  • 4 cups acorn squash, thinly sliced
  • Olive oil
  • 1/2 cup coconut sugar
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon Nielsen Massey vanilla powder
  1. Preheat oven to 375 degrees.
  2. Line a baking sheet with parchment paper.
  3. In a small bowl mix together the coconut sugar, vanilla powder and pumpkin pie spice.
  4. Place the acorn squash slices on the baking sheet drizzle with olive oil and sprinkle with the sugar mixture.
  5. Cook in the oven for 20 to 25 minutes or until browned.
  6. Remove from the oven and serve warm.
