Easy Pumpkin Bread

  • 1 box pumpkin loaf mix
  • 1 stick unsalted butter, melted
  • 1 teaspoon vanilla
  • 2 eggs
  • 1/4 cup sour cream 
  • Water (as called for in recipe -1/4 cup)
  • 1/2 cup chopped nuts
  • 1 tablespoon candied ginger

Glaze:

  • 1 cup powdered sugar
  • 3-4 teaspoons pumpkin spice creamer

Stir together. Should easily run off a spoon! 

  1. Preheat oven to 350 degrees.
  2. Spray loaf pan with nonstick cooking spray.
  3. In a medium bowl, mix together the pumpkin loaf mix, eggs, melted butter, sour cream, vanilla and water.
  4. Stir in the nuts and candied ginger.
  5. Pour into the loaf pan and bake for 45-50 minutes or until the loaf is golden brown and cooked through. (Use a toothpick to check.)
  6. Remove from the oven and allow the loaf to cool and then remove from loaf pan. Drizzle with glaze.
