Easy Pumpkin Bread
- 1 box pumpkin loaf mix
- 1 stick unsalted butter, melted
- 1 teaspoon vanilla
- 2 eggs
- 1/4 cup sour cream
- Water (as called for in recipe -1/4 cup)
- 1/2 cup chopped nuts
- 1 tablespoon candied ginger
Glaze:
- 1 cup powdered sugar
- 3-4 teaspoons pumpkin spice creamer
Stir together. Should easily run off a spoon!
- Preheat oven to 350 degrees.
- Spray loaf pan with nonstick cooking spray.
- In a medium bowl, mix together the pumpkin loaf mix, eggs, melted butter, sour cream, vanilla and water.
- Stir in the nuts and candied ginger.
- Pour into the loaf pan and bake for 45-50 minutes or until the loaf is golden brown and cooked through. (Use a toothpick to check.)
- Remove from the oven and allow the loaf to cool and then remove from loaf pan. Drizzle with glaze.
