Savory Roasted Chicken & Veggies

  • 4 boneless chicken breasts or bone in chicken thighs
  • 2 cups fresh broccoli florets
  • 2 cups fresh cauliflower florets
  • 5 cloves fresh garlic, roughly chopped
  • 1 cup fresh baby carrots
  • 1 cup red onion, cubed
  • 1 package The Little Potato Company Garlic & Parsley flavor
  • 1 sweet potato, peeled and cubed
  • 1 teaspoon dried thyme
  • 1 sprig fresh rosemary, chopped
  • 4 slices thick cut bacon, slices thin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  1. Preheat oven to 425 degrees.
  2. Line baking sheet with parchment paper.
  3. Place all of the veggies and potatoes in a gallon sized Ziploc bag.
  4. Drizzle the contents with olive oil and seasoning packet.
  5. Shake the contents and then place on the baking sheet.
  6. Add the chicken to the bag and shake.
  7. Place chicken on top of the veggies.
  8. Sprinkle the chicken and veggies with slices bacon.
  9. Cook for 25 minutes.
  10. Serve warm with your favorite salad!
