Pumpkin French Toast

  • 1 loaf pumpkin bread, cut into 1/2 inch slices
  • 1 can coconut milk
  • 3 eggs
  • 1 cup of pumpkin puree
  • 1/3 cup sugar
  • 1 tbsp. vanilla
  • 1 tbsp. cinnamon
  • 1/2 teaspoon salt
  • Toasted coconut and roasted pumpkin seeds
  • Whipped cream
  • Syrup
  1. Place a nonstick skillet on the stove at medium heat.
  2. In a shallow dish, whisk together the coconut milk, pumpkin puree, sugar, vanilla, cinnamon, and salt.
  3. Set a pumpkin bread slice, one at a time, into the custard mixture.
  4. Allow the bread to sit for 20 seconds and then flip over and repeat.
  5. Brush the warm.skillet with butter and set the bread slice in the pan.
  6. Cook for 3-4 minutes or until browned on each side and serve with whipped cream and sprinkle with toasted pumpkin seeds.
