ButterPup Cupcakes

  • 1 cup whole wheat flour
  • 1/4 cup old fashioned oats
  • 2 teaspoons baking powder
  • 1/2 cup pumpkin puree
  • 3 tablespoon honey
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 2 tablespoon honey
  • ****add 1/4 cup bacon bits (optional)

Frosting

  • 4 ounces cream cheese, at room temperature
  • 1/4 cup creamy peanut butter
  • 2 tablespoon honey
  • Sprinkles & dog bones
  1. Preheat oven to 350 degrees F.
  2. Line a muffin tin with paper liners; set aside.
  3. In a large bowl, combine flour, oats, baking powder, pumpkin, apple sauce, honey, vegetable oil and eggs.
  4. Scoop the batter into the muffin cups evenly.
  5. Bake for 15-20 minutes.
  6. Remove from the oven and cool. 
  7. To make the frosting, mix together the cream cheese, honey and peanut butter.
  8. Place in a piping bag and squeeze onto cupcakes.
  9. Top with sprinkles and a dog bone.
