Strawberry Vanilla Freezer Jam
- 4 cups strawberries, chopped
- 4 cups sugar
- 1 box Sure Gel fruit pectin
- 1 vanilla bean
- 1 tablespoon vanilla extract
- 3 pint canning jars, sterilized
- In a large bowl place the chopped strawberries and mash with a potato masher or pulse in a food processor till chunky.
- Add the sugar into the fruit.
- Cut the vanilla bean in half and scrape the seeds from the inside and add into the strawberry mixture stir.
- Allow the strawberry mixture to sit for at least 10 minutes.
- In a small sauce pan bring 3/4 of a cup of water and one packet of sure gel fruit pectin to a boil for 1 minute.
- Stir to help remove any lumps.
- Pour the boiled pectin into the strawberries and stir for 3 minutes to make sure the pectin is evenly distributed.
- Ladle the warm jam into the jars.
- Screw on the lids and allow jam to sit on counter for 24 hours before placing in the freezer to store.
