Easy Pickled Red Onions

  • 1 1/2 cups rice vinegar
  • 1/4 cup sugar
  • 1/2 teaspoon allspice
  • 1 teaspoon salt
  • 2 garlic cloves
  • 1 large red onion
  • **1/2 teaspoon red pepper flake (optional for some heat)
  • 1/2 quart Ball canning jar, sterilized
  1. In a small saucepan simmer the rice wine vinegar, salt, sugar, allspice and garlic cloves till it begins to boil.
  2. While the brine is cooking slice the onion into thin 1/4 inch slices.
  3. Place the onion into the jar.
  4. Remove the brine from the stove top once it begins to boil.
  5. Carefully pour the brine over the onion and place the screw lid on the jar.
  6. Allow the jar to cool on the counter top.
  7. Put the jar in the refrigerator to chill overnight before serving.
