Tiki BBQ Chicken Sandwich


  • 4 Boneless skinless chicken breasts
  • 4 King Hawaiian hamburger rolls
  • 4 Slices Gouda cheese
  • Lettuce
  • Tomato
  • Red onion
  • Hawaiian BBQ Sauce
  • 1 Cup pineapple juice
  • 1/2 Cup ketchup
  • 1/2 Cup soy sauce
  • 2 Tablespoons dark rum
  • 1/2 Cup coconut or light brown sugar
  • 2 Teaspoons ground ginger


  1. Place all of the ingredients in a small saucepan and simmer for 10-15 minutes on low heat or until thick.
  2. Remove from heat and store in an airtight container.

To Make The Sandwich:

  1. Grill the chicken until done.
  2. Five minutes before you take the chicken off the grill brush with the bbq sauce. Allow the BBQ sauce to warm and then place a slice of Gouda cheese on the chicken breast.
  3. Close the lid for 1 minute to melt. Remove From the heat and allow the chicken to rest 5 minutes before making your sandwich.
