The Best Oatmeal Cookies

  • 1/2 cup shortening
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 tablespoon vanilla or vanilla paste
  • 2 eggs
  • 1 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1 1/2 cups all-purpose flour
  • 3 cups old fashioned oats

***Optional Mix-ins: 3/4 cup of chocolate chips, pecans, raisins, raisins, butterscotch chips or anything else that sounds good!

  1. Preheat oven to 350 degrees.
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl using an electric mixer beat together the shortening, unsalted butter, and sugars till it is light and creamy.
  4. Add in the eggs and vanilla. In a separate bowl stir together all of the dry ingredients.
  5. While mixing on low speed, add one cup at a time the dry ingredients until it is all mixed together.
  6. Add in any mix-ins.
  7. Using a large cookie scoop place cookie on baking sheet allowing 2-21/2 inches between cookies.
  8. Bake for 10 minutes and allow the cookies to cool on a piece of parchment paper on your counter top.
