Corny Cornbread Muffins

  • 2 boxes Jiffy cornbread mix
  • 1 1/2 cups leftover cream corn
  • 2/3 cup milk
  • 2 eggs
  • 2 cups shredded cheese, divided
  • 6 slices bacon, cooked crisp
  • 4 tablespoon butter melted
  • Muffin tin
  • Muffin pan liners
  1. Preheat oven to 400 degrees.
  2. Line a muffin tin with baking cups.
  3. In a medium sized mixing bowl stir together the cornbread mix, creamed corn, milk, eggs, 1 cup of cheese, melted butter and 3 slices crumbled bacon till all of the ingredients are combined.
  4. Using a cookie scoop place muffin fix in cups till they are 2/3 way filled.
  5. Sprinkle with the additional cheese and remaining crumbled bacon.
  6. Bake for 20-25 minutes or until golden brown. Serve warm.
