- 1 cup Garbanzo beans, drained
- 1/4 cup olive oil,
- Salt & pepper,
- 4 cup baby spinach
- 1 pint cherry tomatoes,
- 1 microwavable packet quinoa/brown rice
- 1/4 cup pumpkin seeds,
- 1 avocado, sliced
- Warm the quinoa and brown rice according to package instructions.
- To assemble 2 bowls: Fill 2 bowls with baby spinach, place 1/2 of the rice/quinoa mix, garbanzo beans, cherry tomatoes, pumpkin seeds, and avocado.
- Drizzle with olive oil and sprinkle with sea salt & pepper.
