Buddha Bowl

  • 1 cup Garbanzo beans, drained
  • 1/4 cup olive oil,
  • Salt & pepper,
  • 4 cup baby spinach
  • 1 pint cherry tomatoes,
  • 1 microwavable packet quinoa/brown rice
  • 1/4 cup pumpkin seeds,
  • 1 avocado, sliced
  1. Warm the quinoa and brown rice according to package instructions.
  2. To assemble 2 bowls: Fill 2 bowls with baby spinach, place 1/2 of the rice/quinoa mix, garbanzo beans, cherry tomatoes, pumpkin seeds, and avocado.
  3. Drizzle with olive oil and sprinkle with sea salt & pepper.
