Brownie Mousse Trifle

  • 4 eggs yolks
  • 1 teaspoon vanilla
  • 2 cups whipping cream, divided
  • 10 ounces bittersweet chocolate
  • 4 tablespoons sugar, divided
  • Leftover brownie scraps (2 cups)
  1. In a medium saucepan, stir together 2 tablespoon sugar, 3/4 cup whipping cream and egg yolks over LOW heat.
  2. Stir till the mixture coats the back of a spoon.
  3. Remove from the heat and pour the cream mixture through a fine mesh strainer in a medium sized bowl.
  4. Stir in the chocolate till it is smooth.
  5. Allow the mixture to cool. In another bowl whip the cream with the remaining sugar and vanilla till stiff peaks form.
  6. Fold the whipped cream into the chocolate mixture until well combined.
  7. To make the trifle: Place a couple of tablespoons of brownie crumbles in a small cup, then a scoop of mousse and repeat.
  8. Finish with the mousse on top.
  9. Finish with the sprinkles or chocolate shavings of your choice
