Meyer Lemon Loaf

  • 2 cups all-purpose flour
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup. oil
  • 2 tsp. vanilla extract
  • 2 eggs
  • 1 cup sugar
  • 1 cup Noosa Lemon yogurt
  • Zest & juice of 1 lemon
  • 1 cup blueberries
  • 1 cup powdered sugar
  • 3 tablespoons fresh Meyer lemon juice
  1. Preheat oven to 350 degrees and spray a loaf pan with nonstick cooking spray.
  2. In a large bowl mix together the sugar, oil, yogurt, eggs and vanilla.
  3. Add 1 teaspoon of fresh lemon zest.
  4. Stir in the flour, baking powder and salt till all ingredients are fully incorporated.
  5. Pour the lemon batter into the loaf pan and bake for 1 hour or until a knife comes out clean from the middle of the loaf.
  6. Set the loaf on a cooling rack for 15 minutes.
  7. While the loaf in cooking, mix together the powdered sugar and fresh lemon juice till you reach a glaze like consistency.
  8. Carefully remove the loaf from the pan and set on parchment paper.
  9. Drizzle the lemon glaze over the top.
  10. Serve!
