Slow Cooker Sausage & Bean Soup

  • 1 pound Italian sausage, sliced
  • 4 cups chicken stock
  • 1 can crushed tomatoes
  • 2 cans cannellini beans, drained
  • 1 onion, chopped
  • 4 celery ribs, chopped
  • 3/4 cup carrot, chopped
  • 1 green pepper, chopped
  • 1 zucchini, chopped
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 bay leaves
  1. Place all of the ingredients in a slow cooker.
  2. Put the lid on and cook on high for four hours or low for eight hours.
