Cranberry & Amaretto Chutney
- 1 bag fresh cranberries
- 1/2 cup water
- 1/2 cup fresh orange juice
- 1 cup sugar
- 1 tablespoon candied dried ginger
- 1/4 orange
- 2 tablespoon amaretto
- In a medium sized saucepan add the cranberries, water, fresh orange juice, and sugar.
- Bring the cranberries to a boil and cover.
- Reduce the heat and simmer for 10 minutes.
- Remove the pot from stove and allow the cranberries to cool slightly.
- Poor the cranberries into a food processor.
- Add in the orange (peel and all), amaretto, and candied ginger.
- Pulse till the cranberries are chopped.
- Pour the cranberry chutney into a plastic container and cover.
- Refrigerate overnight.
