Pumpkin Spice Drops

  • 1 cup unsalted butter
  • 2/3 cup sugar
  • 2 teaspoons pumpkin spice flavoring
  • 1 egg
  • 1/2 teaspoon salt
  • 2 1/4 cups all-purpose flour
  • Pumpkin Spice sugar (1/4 cup sugar and 1 teaspoon pumpkin pie spice)
  1. In a large bowl beat together the butter, sugar and pumpkin spice flavoring until light and fluffy.
  2. Add in the egg and continue beating.
  3. Slowly add the flour and continue mixing until a ball forms.
  4. Preheat the oven to 400 degrees.
  5. Using a small cookie scoop place small round ball of cookie dough on a baking sheet 2 inches apart.
  6. Flatten the dough with the palm of your hand and then sprinkle with pumpkin spice sugar. Bake for 10 minutes.
  7. Cool and store in an airtight container.
