Chive Egg Salad

  • 5 eggs, hardboiled
  • 2 tablespoon mayonnaise
  • 1 teaspoon dijon mustard
  • 1 tablespoon chives, finely chopped
  1. In a small bowl, break the hardboiled eggs with a potato masher until there are small pieces.
  2. Add the mayonnaise, mustard and chives.
  3. Add salt and pepper to taste.
  4. Stir together and spread on soft crustless bread.
  5. Cut in a diagonal or into small squares to serve.
  6. Place on a platter.

Dill and Cucumber Cream

  • 1/2 cup cream cheese, softened
  • 1 tablespoon fresh dill, chopped
  • 1/2 teaspoon garlic salt
  • 1 English cucumber, peeled and sliced extra thin
  1. In a small bowl combine the cream cheese, dill and garlic salt.
  2. Spread the cream cheese mixture on both slices of bread.
  3. Add the thinly sliced cucumber on one piece of bread and then place second slice on top.
  4. Cut into squares.
  5. Keep chilled till you are ready to serve.
