Lemon Ice Box Cake

  • 1 lemon cake mix
  • 1 small box strawberry jello
  • 1 1/2 cup strawberry soda
  • 1 jar lemon curd
  • 1 small box instant vanilla pudding
  • 1 container Cool Whip
  1. Prepare the lemon cake according to package instructions in a 9x13 casserole pan.
  2. Remove from the oven and immediately poke holes all over the cake with a toothpick.
  3. In a small bowl, mix together the strawberry jello and strawberry soda.
  4. Pour over warm cake and cover.
  5. Refrigerate for at least 3 hours.
  6. Remove the cake from the refrigerator.
  7. Spread the lemon curd over the top of the cake. 
  8. To make the topping: in a medium sized bowl mix together the vanilla pudding and Cool Whip till combined.
  9. Spread over the top of the cake.
  10. Cover with plastic wrap and return to the refrigerator to chill until you are ready to serve.
