Broccoli & Ham Quiche

  • 1 frozen deep dish pie crusts
  • Pie weights or dried beans
  • 5 eggs
  • 1 cup half and half
  • Salt and pepper
  • 1/2 cup diced ham
  • 1 cup shredded Swiss or cheddar cheese
  • 1/2 cup broccoli florets
  1. Preheat oven to 375 degrees.
  2. Place a piece of parchment paper on the inside of the frozen pie crusts.
  3. Place 1 cup of dried beans on the parchment paper and bake the crusts for 20 minutes.
  4. In a small bowl whisk together the eggs, half and half, salt and pepper.
  5. Once the crusts are done pre-baking remove the parchment paper and beans.
  6. Sprinkle the cheese on the bottom of the crust and then top with the ham and broccoli.
  7. Pour the egg custard over the top and bake for 30 minutes or until the middle no longer wiggles.
  8. Serve warm with your favorite soup or salad.

***Freeze quiche by placing in a gallon sized freezer Ziploc bag
