Teriyaki Chicken Broccoli Bowl

  • 2 chicken breasts, grilled and sliced
  • 2 cups fresh broccoli, steamed
  • 1/2 red pepper, sliced
  • 1 zucchini, cut into 1/4 and cubed
  • 2 cups white or brown rice, cooked
  • Sauce:
  • 1/2 cup low-sodium soy sauce
  • juice of one orange
  • 1/4 cup water
  • 3 tablespoon light-brown sugar
  • 3 tablespoon honey
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon rice vinegar
  • 1 1/2 tablespoon cornstarch
  1. Combine all of the ingredients in a sauce pan over medium heat and cook till thickened.
  2. Remove from the heat and set aside.
  3. Saute the vegetables in 1 tablespoon coconut or canola oil till veggies are tender. (Not limp…still crisp)
  4. To make the bowl: add 3/4 cup rice to bowl.
  5. Top with sliced chicken and veggies. Drizzle with teriyaki sauce and enjoy!
