Citrus Salmon in Paper

  • 2 salmon filets
  • 1 lemon, sliced
  • 1/2 orange, sliced
  • 1/2 teaspoon Herbs de Provence
  • Parsley
  • Olive oil
  • Salt/pepper
  • Parchment paper
  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper and then repeat. That is the length and width you need to make your pouch.
  2. Place 1/2 of the orange slices in the middle of each piece of paper.
  3. Place your salmon filet on top of the oranges.
  4. Drizzle with olive oil. Sprinkle with salt and pepper.
  5. Lightly sprinkle with Herbs de Provence seasoning. Lay lemon slices and parsley on top of the salmon.
  6. Fold in the sides of the paper and fold to seal at the top.
  7. Place on the baking sheet.
  8. Cook in the oven for 20 minutes or until salmon is cooked through.
  9. Remove from the oven and allow the salmon to rest 5 minutes before CAREFULLY cutting open your sack.
  10. Serve with a green salad!
