Guiltless Greek Chicken Sandwich

  • 1 pound chicken tenders
  • 1/4 cup olive oil
  • 3 cloves garlic, crushed
  • 1 teaspoon dried oregano
  • Juice of one lemon
  • Flatbread or lavash
  • Hummus
  • Tzatki sauce
  • Feta cheese
  1. In a large Ziploc bag add the chicken tenders, olive oil, garlic, oregano and lemon.
  2. Place in the refrigerator to sit for at least 1 hour to overnight.
  3. To make the sandwich: Grill or brown the chicken. Spread 2 tablespoons hummus on the lavash, place fresh spinach over the hummus.
  4. Add 2 pieces of chicken to the center as well as tomatoes.
  5. Sprinkle with feta cheese and roll up like a wrap. Cut in half.
  6. Serve with tzatki sauce!
